Fresh Cherry & Cranberry Bircher Muesli
Serves: 3 portions
Cooking Time: 2 Minutes
Ingredients
90g Jumbo Oats
30g Dried cranberries
1 large apple (peeled and grated)
100g natural yoghurt
85ml milk or apple juice
90g fresh cherries (deseeded and chopped)
50g flaked almonds (for the garnish)
Method
- In a large bowl, add all the ingredients, except the flaked almonds. If the mixture is too dry, then add a touch of water.
- Mix well.
- Separate into 3 portions and garnish with flaked almonds
Note: If cooking for 1 person, this keeps in the fridge for 5 days and it freezes well too.
Apple & Cinnamon Oat Porridge
Serves: 2
Cook Time: 10 minutes
Ingredients
50g rolled oats
10g chia seeds
10g flaxseeds/linseeds
½ tsp cinnamon
½ tsp ginger – ground
150ml coconut water
60ml water
20g apple - chopped
1 fresh fig
½ tsp honey
Method
- Add milk and water and bring to the boil. Add the oats, chopped apple and simmer for 25 minutes until grains are soft
- Add flaxseed and cinnamon, ginger and mix well
- Serve with sliced apple and drizzle with honey
